My sister really likes kale. She likes it so much that she eats it raw. Sure, I've eaten it...but I've never prepared it at home. My inexperience with kale was quickly revealed to me when a bunch that I bought a few weeks ago wilted within a day or two of me throwing it in the fridge. Then I read somewhere on the internets that you're supposed to put it in a bag or container to keep it crisp. So, I bought another bunch and put it in a bag until I was brave enough to cook with it.
The moment for home-cooked kale came for me this past Sunday after reading about boiled kale on Orangette. I was quite certain that boiled greens wouldn't be the best way to introduce kale to my household, however I was inspired by her serving suggestion of kale with poached eggs.
I looked through my copy of the Rebar cookbook and the Veganomicon for flavour inspiration and decided my best bet would be to braise the kale with some butter and garlic (I know, not vegan---but that is a great cookbook and sometimes I do it up a la the real vegan deal, but I can't help it...I likes the butter). I also tossed in some crimini mushrooms 'cos I thought it would add a little punch. I sauteed the mushrooms first and then added the kale. I don't poach eggs at home very often because I don't own a slotted spoon (kitchen sacrilege!) and they're just a bit too much work despite being my favourite style of egg. However, poached was the only thing I would settle for in this experiment. I spooned the kale mixture on top of a toasted whole-wheat bagel, plopped on the egg and then grated some edam on top. To finish off the plate I served up some roasted yams. Delish!
Even after all that kale goodness I still had quite a lot of the leafy stuff leftover, which leads me to tonight's dinner of veggie burritos featuring...kale! This time I fried up some garlic and potato chunks with baby plum tomatoes. I added some red pepper, black beans and kale to the pan and sauteed it up real nice. Added a couple of shakes of sea salt and then filled up some whole wheat tortillas with the mixture. Before rolling them up I topped them with Asadero cheese, avocado and Botanita lime hot sauce. Once more...Delish!
I'm no longer worried about what to do with kale and I think I'll make it again sometime.

Le sigh. Kudos to your sister- I know kale is super healthy, but I can't bring myself to like it, nor to make that Orangette recipe. Come over sometime and we'll make it together.

Lydia, you'd be surprised how good it is just sauteed with butter and garlic and a bit of sea salt. It keeps a bit of a crunch, which is nice compared to spinach or other greens.

My mom served us this meal about once a week growing up:
big pile of mashed potatoes topped with a plop of steamed spinach and two poached eggs. I hated it. Now, I think I would love it.

i usually make kale by steaming it and then i toss it with a light dressing of olive oil, wine vinegar, salt & pepper. i add some sesame seeds or toasted almonds.
Yummmmmmmmm...I ordered some more for my veggie bin this week, so I might try these kale ideas!
Michael wanted me to tell you that he prefers it steamed and tossed with with a bit of sesame oil, soy sauce and chili flakes.

i've been a fan of the kale for a few years. recipe one: raw kale, green olives, apple, avocado and carrot. best salad ever! chop the first 3 items very small, shred your carrot, and get a really soft avocado.. it is your dressing essentially. salt, pepper, enjoy. recipe 2: kale mashed potatoes. yum! steam that kale or saute it up with garlic, and put it in your mashed potatoes.
my god, i didn't know there was a kale club out there. i love the stuff too, though i confess i don't eat it raw... steamed with a bit of olive oil and herbamare salt and i'm good to go. love the idea of pairing it with eggs and/or mashed potatoes though... yum.
